Modena IGP balsamic vinegar is converted by spherification into a delicious cascade of small pearls used as a refined garnish for various popular dishes. Spherification is a molecular gastronomy technique which consists of the controlled gelation of a liquid (here balsamic vinegar) to which sodium alginate (a molecule extracted from brown algae) is added, and which is immersed in a liquid solution.

The result obtained will be the formation of spheres with a liquid core and a gelled wall.
Its use in cooking has practically no limits: try it on smoked salmon, beef carpaccio or even fresh fish tartare. A little more original? Combine them with crackers and cheese, caramelized onions or even with
strawberries... These pearls bring a surprising touch of acidity to meat or fish dishes and they express all their personality when combined with ice cream.
